Extra-crispy fried mozzarella

Taking a cue from the traditional mozzarella in carrozza, which is kind of an Italian grilled cheese, this recipe, adapted from my cookbook "Let's Eat" (Union Square & Co., 2023), features skewers of alternating mozzarella and bread chunks that are dipped in a seltzer-based batter and fried until super crispy. Just before serving, the pieces are bathed in salty, herby melted anchovy butter. Mozzarella in carrozza is known for its melty strands of cheese in every bite; this version might just improve on the original.
